Sometimes you just want something fresh and citrusy, especially for the summer or as an accompaniment to fish.
Ingredients
Chilli / Garic / Onion chop
Oil heat in a pan on a medium heat and add the above
Leek cut longways to make it into long strips – these will mix nicely with pasta if you use spaghetti – this is not a must though. Add to the pan and leave to soften
Lemon flush off with some lemon juice and a splash of water, don’t be shy with it. Add some Sugar and Salt and leave to bind and reduce, then reduce the heat.
Pasta make pasta
Spinach add spinach to the leek as well as the finished pasta
Pecorino grate and mix with Double Cream, then mix in with the pasta and veg – let it warm on a low temperature and the cheese start to melt but not boil (similar to carbonara), then serve straight away.
